Mister Jose Ruiz Canales created the "Venta El Soldao" 60 years ago with Miss Teresa Montero Cruz.
Together they created dishes that are famous for a great deal of people.
For example, the countryside Chicken with rice, Pheasant of the hills, Deer and partridges and of course the Loin in mantequa of Iberian pork.
Today, the daughter Maria de la Encima Ruiz Montero directs the sale.
